Healthy-ish Chocolate Mousse Recipe

Looking for a healthy-ish dessert? Like chocolate? Then this dessert is for you!!

1 can of chickpeas (you’re only using the liquid from straining the beans for this recipe)
7oz of bar chocolate or chips (I used semi-sweet chocolate chips)
1-3 Tablespoons Maple Syrup

Optional:
1/2 cup heavy whipping cream
1/2 teaspoon vanilla extract

Strain the chickpeas and only use the liquid for this recipe. Whisk on high until stiff peaks form. Meanwhile, melt the chocolate (either bars or chocolate chips) along with maple syrup. GENTLY fold the stiff peaks with the chocolate. Option to be done ✅ here and pour into serving containers, refrigerate for 1-2 hours or overnight.

Option 2: (has more fat from the heavy cream but makes the mousse a little creamier). After whipping the stiff peaks with the chocolate whisk in heavy cream and vanilla extract until smooth. Then pour into containers, refrigerate for 1-2 hours or overnight.

Serve chilled.
