Pumpkin Smoothie

I am so excited that it’s almost fall! I love the fall weather: cool brisk breeze, leaves changing color but still enjoying some sunshine without it getting too hot.

Craving something with pumpkin? Make this delicious pumpkin smoothie!

Homemade Coconut Milk:

1 cup unsweetened shredded coconut

2 cups of water

Blend for 60-90 seconds in a Blendtec Blender or Vitamix.  May take longer in other blenders.  The Blendtec and Vitamix are super powerful and break things down to a much finer consistency than other blenders.

 

Pumpkin smoothie:

1 cup coconut milk

1/4 cup pumpkin

1 teaspoon date puree or 1 pitted date (more if you like it sweeter or less if you don’t want it as sweet)

1 teaspoon honey

pinch of salt

1/2 teaspoon cinnamon (or to your taste)

1/4 teaspoon all spice (or to your taste)

1/2 cup ice

Optional: 1 scoop of protein powder.  I used Garden of Life Smooth Energy Plant Protein Powder (makes a smoother consistency and delicious taste with a boost of energy from Yerba Mate Tea in the powder).

Blend for 60 seconds or until smooth.
