Instapot Ayurvedic Lentil Soup

Ayurvedic Lentil Soup Instapot Recipe:

1/2 cup red lentils (rinsed)

1/3 cup mung beans (rinsed)

1 cup chopped sweet potatoes

1/2 cup chopped celery

1/2 chopped onion or 1/2 teaspoon onion powder

2 minced garlic cloves or 1/4 teaspoon garlic powder

4-5 cups unsalted or low sodium bone broth (I used chicken Bone Broth)

1 teaspoon of spices (I used fennel, a savory blend that I have and a pinch of dried lavender flowers)

1/2 teaspoon salt

Add all above ingredients into the Instapot. Put the top on and cook on high for 30 minutes or select your soup/stew button on your Instapot.

Optional: Once the soup stew is done cooking stir in 1 Tablespoon of ghee or olive oil.
Season to taste; add salt and pepper to your desired liking.

Serve warm and enjoy!
