✨Vegan Nachos✨⠀

Getting creative with what to make for dinner tonight! We made this delicious dinner with leftover scraps and random food items in the house that needed to be used up before they went bad. It’s fun getting creative in the kitchen! We had some colorful peppers, cilantro and parsley, cauliflower and some tortillas that needed to be used before they all went bad. So I decided it was going to be a vegan Mexican night.⠀

Cauliflower tacos? Hmm, how about cauliflower nachos? Yeah!⠀

Scouring through the fridge and cabinets for additional items to throw this dinner together I found a purple onion, fresh garlic, nutritional yeast, black beans, frozen corn, salsa, a carrot, lemons and limes.⠀

We needed a vegan nacho cheese sauce…⠀

So I must confess that I don’t go by recipes when I cook or bake really. I just throw it together and taste it and add things here and there to make it how I want to taste.⠀

This sauce turned out pretty darn well so I estimated the measurements after making it so I hopefully one day can recreate it. Lol.
Keep in mind that this is an estimated recipe after making it. So if you try making it at home tweak it to your liking.

2 cups homemade cashew milk slightly thicker than usual⠀
1/2 cup nutritional yeast⠀
1.5 Meyers lemons juiced⠀
Tiny touch of maple syrup⠀
1/2 cup of cooked and rinsed black beans⠀
3 small pieces of roasted cauliflower⠀
1 large garlic clove⠀
1/4 cup purple onion⠀
Paprika 1 Tablespoon mix of smoked and regular⠀
1/2 of a carrot⠀
1/4 cup salsa⠀
Salt⠀
Garlic powder⠀
Onion powder⠀
Various seasonings and spices⠀

Blended well in the Blendtec blender and viola! Vegan nacho cheese sauce!⠀
